My mother would make these for her holiday gatherings using button mushrooms. I thought why not try them with smaller Portobello mushrooms and experiment by adding different toppings to appealing to everyone. They are a perfect addition to your holiday line up of appetizers from Christmas to New Years Eve and they won't have you in the kitchen slaving away for hours,( but no one needs to know that). The great thing with these little guys, you can make them up ahead of time and pop them in the oven before your guests arrive! If you like mushrooms, you are going to LOVE these little gems.
Here is the list of ingredients that you will need: to make 6
- You favorite Stuffing mix (or homemade) You will only be using aprox. 1/4 of the box
- Chicken Stock (or you can just use water, it's for the stuffing)
- Baby Portobello Mushrooms ( pictured is a 6 pack)
- 1/2- Small Brown Onion
- Celery ( a couple of stalks)
- 1/2- Small Zucchini
- Aprox. 1-Stick of Butter (for stuffing and to saute mushrooms in)
- Mozzarella Cheese
- Marinara Sauce
And here is what you do:
Step 1: Clean out the Button in the mushrooms
Step 2: Saute the mushrooms in Butter for 5 minuets till tender, flipping so not to burn.
Step 3: Make stuffing per directions using the vegetables.
Step 4: Add stuffing to mushrooms in oven safe pan.
Finish off by:
Baking at 425 degrees till stuffing is toasted and browned to liking (10 minuets approximately)
Top with cheese, marinara sauce and serve hot. Total prep/cooking time Aprox. 30 Min.
Another option to this recipe, try adding Italian seasoned turkey sausage or chorizo to the stuffing. OR Use a large mushroom and make a meal out of it by adding a baked potato and a salad or your favorite side.
