Pumpkin and Chocolate Chip Cookies Recipe:
- 1- Cup Sugar
- 1- Cup Pumpkin
- 1/2 Cup Vegetable Oil (or Coconut Oil)
- 1- Egg
Sift and Add to Above:
- 2- Cups Flour (Pre Sifted or non Sifted)
- 1/2 Tsp. Salt
- 1- Tsp. Cinnamon
- 2- Tsp. Baking Powder
Dissolve and Add to the Rest of the Ingredients:
- 1- Tsp. Baking Soda
- 1- Tsp. Milk
- 1- Tsp. Vanilla
Add Chocolate Chips (and Walnuts if Desired) Spread flat to desired size & Thickness. Bake at 375* for 10-12 Min On Cookie Sheet covered with Parchment paper for best results (or Lightly greased) Let cool completely before decorating. Makes Aprox. 2 Dozen 3" Cookies
Decorating Cookie Monsters: (Spin off from Pillsbury site online)
- Separate frosting into cups per desired amount of colors to be used.
- Take one cookie and place half a marshmallow at back of cookie to help keep top cookie wedged open when filled with frosting.
- Fill front half of bottom cookie with frosting, them top with second cookie.
- Add desired treats and candies to create face/teeth/nose! Have fun with it!
Tip: Keep Frosting in refrigerator till ready to assemble, keeps it from getting too runny.

The perfect meal for lent that the whole family will enjoy! Potato Tacos with Chipotle Sauce.
My mother would make these for her holiday gatherings using button mushrooms. I thought why not try them with smaller Portobello mushrooms and experiment by adding different toppings to appealing to everyone. They are a perfect addition to your holiday line up of appetizers from Christmas to New Years Eve and they won't have you in the kitchen slaving away for hours,( but no one needs to know that). The great thing with these little guys, you can make them up ahead of time and pop them in the oven before your guests arrive! If you like mushrooms, you are going to LOVE these little gems.
Here is the list of ingredients that you will need: to make 6
- You favorite Stuffing mix (or homemade) You will only be using aprox. 1/4 of the box
- Chicken Stock (or you can just use water, it's for the stuffing)
- Baby Portobello Mushrooms ( pictured is a 6 pack)
- 1/2- Small Brown Onion
- Celery ( a couple of stalks)
- 1/2- Small Zucchini
- Aprox. 1-Stick of Butter (for stuffing and to saute mushrooms in)
- Mozzarella Cheese
- Marinara Sauce
And here is what you do:
Step 1: Clean out the Button in the mushrooms
Step 2: Saute the mushrooms in Butter for 5 minuets till tender, flipping so not to burn.
Step 3: Make stuffing per directions using the vegetables.
Step 4: Add stuffing to mushrooms in oven safe pan.
Finish off by:
Baking at 425 degrees till stuffing is toasted and browned to liking (10 minuets approximately)
Top with cheese, marinara sauce and serve hot. Total prep/cooking time Aprox. 30 Min.
Another option to this recipe, try adding Italian seasoned turkey sausage or chorizo to the stuffing. OR Use a large mushroom and make a meal out of it by adding a baked potato and a salad or your favorite side.

Halloween Pizzas for the Little Ghouls #ChooseSmart #CollectiveBias
Here is what you'll need:
1st start off with any ready made/ready to bake pizza crust and bake per directions. I took a single pizza crust and made the 2- smaller pizzas.
2nd decorate how you like! Smart & Final has ALL the things you will need at a price that won't leave you cringing in fear but instead leaves you with extra money for those Trick or Treats for the monsters and Super hero's that will be visiting your door!
I made a one eyed monster using the following ingredients:
- Mozzarella cheese (block or sliced will work) Cut in a Large circle
- Pasta Sauce
- Black Olives (sliced)
The Crust package has you pre bake first, add the toppings then finish off baking the remaining time, so it really makes for an activity you can prep ahead of time and is very quick to make.
So simple and I love seeing the kids get creative when they are making their monsters. This is such a fun activity for the whole family, hope you enjoy it!
This delicious one pot wonder is loved by my friends and family. It brings the warmth of Fall through out the whole house. I hope your family and friends love it as much as mine do!
Here are the ingredients you will need:
- 2T Butter and Olive oil
- 1 Onion chopped
- 1in". Ginger peeled and chopped
- 2-3lbs Carrots peeled and chopped
- 5-6c Chicken stock or if you prefer you can use vegetarian stock
- 1c Heavy whipping cream
- 1T. Salt
- 1t. Pepper
Step 1. Heat butter and olive oil over medium heat add onions, salt, and pepper cook until onions are translucent.
Step 2. Then add carrots, ginger and stock. Bring to a boil then lower to medium heat and cook 20 minutes or until carrots are tender.
Step 3. Remove from heat and puree with a immersion blender (also known as a burr mixer).
Step 4. Puree until smooth, add cream and mix. Do not bring back to boil that will curdle the cream. To re-warm do it over a low heat.
You can also make it and freeze it to use at a later date. But remember to reheat over a low heat.
Serve with a baguette or your favorite bread and Enjoy!
Super Fast and Easy Chili Recipe
My dad used to make chili all the time when I was a kid and I really didn't appreciate it for whatever reason, maybe just to rebel? Recently I rediscovered this yummy and wholesome meal that can be served so many ways and garnished with a ton of goodies, so I decided to try my own take on it. Well I was not expecting the response I got , both Kids and Adults alike LOVED it! Really, but it's just chili I thought? Takes a little bit of prep but so worth the extra steps. Oh and did I mention I throw some extra veggies in my chili. I also use ground turkey meat, making this one you will be happy to serve your kids.
Here's what you'll need:
- 1-Package Ground Turkey Meat (Brand of choice)
- 1- Red Bell Pepper (Use half or the entire pepper to taste)
- 1- Zucchini
- 5- Roma Tomatoes (Or 2 Regular Tomatoes)
- 1- Can Kidney Beans (Brand of Choice)
- 1- Small Brown Onion Or Mexican Green Onions (2 Large)
- 2- Packages Chili Mix (Brand of Choice)
- 2-3 Table Spoons Olive Oil
- Grated Cheeses (choice)
- Sour Cream
- Saltine Crackers
- Tortilla Chips
- Black Olives
And Here's What you'll Need to Do:
Step 1:Chop up all of the vegetables into smaller sized pieces and over medium heat, cook them in a pan with the olive oil till the zucchini is tender.
Step 2:At the same time in a slightly larger pot thoroughly cook the ground turkey till done.
Step 3:Add the cooked vegetables to the cooked turkey.
Step 4: Then add the chili seasoning and the entire can of kidney beans (including all the liquid) mix well and reduce heat. Cook for a few more minuets to get the flavors joined and it's done!
Pretty simple right? The flavors really come through with the cooking of the veggies instead of just adding them in raw I found. Total prep and cooking time is approx. 30 Min.
So whether it be for the big game on the weekend served up over tortilla chips, scooped up in a bowl piping hot with your favorite toppings on a cool fall day, used to top a home made hamburger or spooned over an omelette it's an extremely tasty recipe that can be made ahead of time, frozen and warmed up when you are ready to serve. One warning though, don't expect any leftovers.

What you will need:
Mexican Cheese Blend
A little bit of frying oil
Your favorite Enchilada Sauce
El Yucateco Hot Sauce
Heat up the oil in a frying pan, when it is really hot add the corn tortilla and cook on both sides slightly. Set aside.
In another pan heat up your favorite enchilada sauce. Then dip the tortilla in the sauce and set it on a plate.
Once on the plate sprinkle cheese and if you have any shredded chicken. Continue to stack until you have reached your desired height!

Summer is almost here and you know what your family wants its Ice Cream! Who doesn't love ice cream? The last time I went to a state fair we had this deep fried ice cream and I personally didn't care for it so I thought why not mix the three favorite things in the world to me. Yes Oreo Cookies, Chocolate and of course Ice Cream.
Off we went to Smart and Final to get all of our fixings. The Smart and Final First Street Ice Cream located in the frozen section has a huge selection from the originals of Chocolate, Strawberry, Vanilla to the unique of Mint Chocolate Chip, Butter Pecan, and I will be trying next time Moose Tracks which has peanut butter cups mixed in. Yup!
For this I selected Neapolitan since it is my sons favorite, but you can select any flavor you have your heart set on.
WHAT YOU WILL NEED:
- Your favorite Smart and Final First Street Ice Cream Flavor
- Ice Cream Scoop
- Toppings of your choice
- Melted Chocolate
- Wax Paper
Using the Ice Cream Scoop make Ice Cream Balls and place on a Tray lined with Wax Paper. You got to work quick here cause you don't want the ice cream to melt.
TIP: If you are having a birthday party this is a time saver to do prior to the party and you don't get messy when trying to serve people.
Let them sit in the freezer as you work on the next steps. Melt the chocolate and let it cool down.
Crumble up your favorite topping. Then when the ice cream balls have sat in the freezer for a while take them out and work quickly to cover them with the topping.
Place the tray back in the freezer and let them sit again. I did four at a time and it worked perfectly.
Once all of your ice cream balls were covered with the topping and frozen with a slotted spoon hold the ice cream ball then with another spoon drizzle the chocolate over the ice cream ball. Here I did two at a time.
Then let them sit again in the freezer until frozen.
That's it! My last tips are this. When doing the chocolate part make sure there are no distractions. And try not eat everything before you finish.
